Easy Breezy Brussels + Grilled Kabobs

This past weekend went by in a flash and was the perfect.girls.weekend + a newborn baby girl. A few of my oldest and best friends flew to visit our bff and her new precious little gal pal! It was a relaxing getaway filled neighborhood strolls, low key delicious home cooked dinners, and lots of vino. This post features our dinner from Saturday night… it was easy to put together and involved little prep. One of my besties whipped up the brussels sprouts, and the hostess’s husband was the grill master for the kabobs. I threw together a quick salad, and one of the other girls was in charge of dessert (apple crisp a la mode). There was a lot of chit chat going on in the kitchen… so our rolls turned into crunchy rocks… as we all forgot to pay attention to the bread in the oven – whoops. Who needs the bread anyway?! This healthy dinner is perfect for a week night or for entertaining. All in all it was a total blast, and more importantly I am SO proud of my new mama best friend — she is incredible and it was a very special visit which we will always cherish.

Stovetop Brussels Sprouts

  • 1 package fresh brussels sprouts (not frozen)
  • nonstick cooking spray
  • olive oil
  • low sodium soy sauce
  • salt and pepper

Prep

  • trim ends off the brussels sprouts
  • in a medium to large skillet or saute pan add nonstick cooking spray and two tablespoons olive oil
  • over medium high heat begin to brown the brussels sprouts
  • add a little s&p and a couple splashes of soy sauce (a little goes a long way)
  • let this sizzle for 8 minutes… if you like a crunchier texture only brown for about 5 minutes

Chicken & Steak Kabobs

  • almost all grocery stores carry ready to go kabobs in the meat department, we purchased steak and chicken that were already marinated… so easy
  • over a medium high grill cook the kabobs for 4-6 minutes on each side
  • if you don’t have a bbq pit or grill, then broil in the oven for a few minutes on each side on a cooking sheet
