I arrived home last Friday afternoon to find a nice little package at my doorstep courtesy of Sir Kensington’s – “the divine alternative”, and it was divine indeed. It was pretty exciting to receive my first cookingandaconvo gift, and I am very grateful to the peeps over at Sir K’s for sending me such a tasty selection to taste test. I contemplated doing a burger post to feature the different flavors they offer, but, eh… kind of cliche. So… instead I present a post on Chipotle Rosemary Flank Steak + Super Seasoned Sweet Potato Fries. The 4 mini glass bowls pictured above contain classic ketchup, chipotle ketchup, classic mayonnaise, and chipotle mayonnaise. Each one made for a perfect dipping sauce for the fries and the meat. The classic ketchup was comprised of sweet and tangy flavors and tasted extremely fresh, the chipotle ketchup had a kick from the peppers, cilantro, lime juice and coriander that it contains, the classic mayo is made with cage-free eggs and sunflower oil and tasted very light – add a dash of curry and it would make a great steamed artichoke dipping sauce, and the chipotle mayo was by far the best for the sweet potato fries as you could really taste the garlic, cumin and adobo spices in it — this would be superb on fish tacos or as a panini spread. Chipotle Rosemary Flank Steak – serves 2
Ingredients:
- 1 lb flank steak or beef fajita skirt steak – pounded to 1/2 inch thick
- 1 tablespoon minced garlic
- 1 teaspoon coriander
- 1 teaspoon cumin
- 1 teaspoon black pepper
- pinch of sea salt
- fresh rosemary springs
- 3 juiced limes
- 1 teaspoon soy sauce
- 1/4 cup chopped cilantro
If you don’t have time to prepare your own marinade – most grocery stores carry pre-marinated meats in the fresh meat section or buy a bottle with ingredients that contain similar items listed above.
Directions:
- in a large ziplock bag place the meat and all of the ingredients and marinade this in your fridge for 2-6 hours… the longer the better
- start your grill and once the heat is at 350… grill the steak on each side for 3-5 minutes depending on how rare you like it
- slice it thinly against the grain and top with fresh rosemary
Super Seasoned Sweet Potato Fries
Ingredients:
- 4 large sweet potatoes
- olive oil
- paprika
- Lawry’s Original Seasoned Salt
- fresh cracked black pepper
Directions:
- preheat oven to 450 degrees
- on a cookie sheet lay foil or parchment paper
- place 1/4 thick peeled and sliced strips of sweet potato fries on the cookie sheet tossed in a little olive oil (just enough to coat) and sprinkle the Lawry’s and paprika
- bake for 18-20 minutes flipping occasionally with a spatula
