SESAME GINGER: 1/2 cup extra-virgin olive oil, 1/4 cup balsamic vinegar, 2 tablespoons low-sodium soy sauce, 2 cloves garlic, chopped, 2 tablespoons honey or brown sugar, 2 tablespoons peeled and minced ginger, 1 teaspoon toasted sesame oil, & 2 tablespoons water
CILANTRO LIME: 2 tablespoons fresh lime juice, 1 garlic clove, minced, 1/2 teaspoon sugar, 1/2 teaspoon kosher salt, 1/8 teaspoon ground coriander, 2 tablespoons extra-virgin olive oil, & 1 tablespoon chopped fresh cilantro
PEANUT SAUCE (blender required): teaspoon minced ginger, teaspoon minced garlic, 1/2 cup creamy peanut butter, 2 tablespoons reduced-sodium soy sauce, 1 tablespoon fresh lime juice, 1 teaspoon (packed) light brown sugar, & 1/4 -1/2 teaspoons crushed red pepper flakes – Add everything to a blender and pulse adding water to thin if needed.
RED WINE DIJON: 1 tablespoon fresh lemon juice, 1 teaspoon Dijon mustard, 1 tablespoon red wine vinegar, 1 garlic clove, finely minced, 1/2 cup extra-virgin olive oil, pinch sea salt, & freshly ground black pepper to taste
GREEK: 2 fresh garlic cloves, minced, 1/4 teaspoon salt, 1 1/2 teaspoons Dijon mustard (Grey Poupon), 1/2 cup extra virgin olive oil, 2 tablespoons fresh lemon juice, 1/2 teaspoon sugar, 5 tablespoons red wine vinegar, 1/2 teaspoon basil leaves, 1/4 teaspoon oregano leaves, & 2 tablespoons feta cheese crumbles (optional)
SKINNY CAESAR: 1/3 cup grated Parmigiano Reggiano, 1/4 cup fresh lemon juice, 1 small garlic clove, minced,
1/2 tablespoon Dijon mustard, 1 teaspoon anchovy paste, 1 tablespoon extra virgin olive oil, & 5 tablespoon fat free Greek yogurt
BALSAMIC: 1/4 cup balsamic vinegar, 2 teaspoons dark brown sugar, optional*, 1 tablespoon minced garlic, 1/2 teaspoon salt, 1/2 teaspoon freshly ground black pepper, & 3/4 cup olive oil
DILL RANCH (unhealthy, but great!): 1 cup sour cream, 1/4 cup mayonnaise, 1 tablespoon milk, 1/4 cup fresh chopped dill, 1/2 teaspoon onion powder, & 1/4-1/2 teaspoon garlic powder
SPICY HONEY MUSTARD: 2 teaspoons honey, 2 teaspoons dijon mustard, 2 tablespoons lime juice, 1/2 teaspoon lime zest, 1/2 teaspoon kosher salt, 1/4 cup olive oil, 1/4 cup vegetable oil, 2 teaspoons chopped thyme and 1/2 of a jalapeno (seeded and minced)
TRUFFLE: 1 tablespoon dijon mustard, 1 tablespoon champagne vinegar, 1 minced shallot, 1/2 teaspoon kosher salt, cracked pepper to taste, 1/3 cup truffle oil, & 1/4 cup olive oil
