Guilt-Free Baked Peaches

You aren’t a true Texan unless you’ve experienced the juicy and perfect peaches grown in Fredericksburg, Texas. They are THE best and can be prepared in many ways. Although I would have loved to have whipped up a decadent peach cobbler with a little Blue Bell vanilla a la mode… mmmm, I needed to stick to my weekday health plan last night by creating a healthier baked peach dessert. Guilt-free doesn’t have to be flavor-free, and these little peaches did not disappoint. They were sweet, gooey, and this recipe didn’t mask the vibrant flavors of a Fredericksburg peach. After reading several baked peach recipes, all of which used brown sugar, I decided to take a stab at creating my own and luckily had all of the ingredients on hand. Enhance them by topping with whip cream, ice cream, cool whip, or cut them up and mix with yogurt.

Guilt-Free Baked Peaches – Serves 3 (1 peach = 1 serving, 75 calories)

Ingredients:

  • 3 ripe fresh peaches
  • agave syrup (or honey)
  • 1 teaspoon cinnamon
  • spray butter (optional)
  • 2 tablespoons granola (I used vanilla almond from Central Market)

Directions:

  • preheat oven to 350
  • slice 3 peaches in half lengthwise, remove seeds
  • place face up on a cookie sheet or in a pie pan
  • spray a tiny bit of butter on the peaches (optional)
  • drizzle a little agave syrup or honey
  • sprinkle with cinnamon and granola
  • bake for 10 minutes
