I have been on a huge fruit kick this summer as it is so HOT here in Texas, and refreshing fresh fruit is always a great thing to have on hand for breakfast and snacking. This morning I woke up wanting something extra chilly and making a quick smoothie was the easiest idea. Try to keep a few bags of frozen fruit in your freezer to have on hand… they work great for homemade frozen yogurt as well (click here for my go-to recipe). This recipe is extremely simple and easy to build off of, so feel free to experiment by adding chia seeds, additional fruit or Greek yogurt. You can also add any type of protein powder for a meal replacement during lunch or dinner. I made this smoothie in under 5 minutes, and it was perfect to drink on the way to work.
PURPLE POWER SMOOTHIE
- in a vitamix, blender or cuisinart mini prep processor combine the following
- 1 cup skim milk
- 1 medium sized banana
- 1 cup frozen blueberries or fresh (if using fresh you need to add ice cubes)
- 1 teaspoon agave syrup or honey for added sweetness
- 1 to 2 scoops peanut butter (optional, tastes great!)
