Marinara Turkey Meat Sauce Over “Zoodles”

So… I am pretty much OBSESSED with my relatively new veggie spiralizing contraption, and if you don’t own one yet then go get one asap! I purchased one from Williams-Sonoma that is simple to use and easy to clean, and it creates ribbons, shoestrings, and veggie noodles; to purchase the Paderno Spiralizer click here. You may have seen my previous post where I used this little machine to make a delicious and pretty cucumber marinated ribbon salad. This cook’s tool comes with 3 different blade sizes, and this recipe required the smallest blade to make faux pasta zucchini noodles, also known as, “Zoodles”. In the past I have used spaghetti squash in lieu of pasta, but the squash tends to throw off a lot of water making your sauce a little on the soupy side. The zucchini noodles retain more water which won’t interfere with your marinara thickness, and I also find the texture of the cooked zoodles to be more “pasta al dente like”. This dish is protein and nutrient packed and will be ready in 30 minutes or less. It’s perfect for a post work out week night meal. Marinara Turkey Meat Sauce Over “Zoodles” – Serves 2


  • 2 medium sized zucchinis
  • 2 cups marinara sauce (if you aren’t making this from scratch then I recommend the brand, “Mom’s Special Marinara”)
  • 1 lb lean ground turkey meat
  • grated parmesan cheese
  • 1 teaspoon red pepper flakes
  • 1/4 cup freshly chopped basil
  • 1 tablespoon olive oil
  • salt and pepper


  • assemble your spiralizer with a small noodle sized blade
  • cut the ends off of both zucchinis and turn both of them into “zoodles”
  • in a medium sized skillet over medium high heat add the olive oil
  • toss the zoodles in the hot oil with a little salt and pepper and let this cook for about 3-4 minutes, turning every so often
  • remove the zoodles and set aside in a bowl
  • in the same skillet brown and fully cook the ground turkey meat
  • then add the marinara sauce and bring to a simmer
  • add the zoodles and combine with the turkey meat sauce
  • plate and sprinkle with parmesan cheese, red pepper flakes and fresh basil

  1. Finding this blog when thanskgiving is just around the corner is definitely fate. Turkey and zucchini noodles sounds perfect. I should start shopping for a spiralizer now.
